Welcome to Week 2 of “What We’re Obsessing Over Right Now.”  This week, our REVStaffer Stephanie tells us what her favorite obsession is of late and it has to do with KALE :)

 

Happy Wednesday REVFam!

This week is for all of the snackers out there! Put down the potato chips and grab a handful or two of kale chips! Even if you are not a leafy lover, you have to give these chips a try. I promise you that you won’t regret it! Heck, you may even end up eating the entire bag! The taste of raw kale is extremely bitter, but once it is cooked it is extremely delicious (and nutritious!). Kale has been said to be the #1 super food out there for you. One cup of kale provides your body with so many benefits:
It is excellent for weight management (one cup of raw kale is 34 calories and as kale chips it is around 60 calories)
Its nutritional benefits are outstanding when it comes to supporting eyesight
There is no cholesterol, no trans fats, and no unhealthy saturated fats; therefore, it is great for cardiovascular health
It is extremely vitamin and nutrient dense (one cup of kale chips provides your body with 134% of your daily vitamin C and over 600% of your daily vitamin K)
Instead of reaching for that bag of Tostitos Chips to eat with my sandwich, I now cook up a batch of delicious kale chips! I still get that salty crunch but now with so many more benefits.

This is what you will need for the chips:

Photo 1Olive oil
Salt (I use Himalayan Salt because it provides also provides so many benefits)
Ground pepper
One bag of kale (I end up using roughly half of the bag which makes around 3 servings)
Recipe:
Preheat the oven to 350 degrees

Remove the leaves from the thick stems and tear kale into bite size pieces and place in a mixing bowl

Drizzle 1 tablespoon of olive oil, and sprinkle 1 teaspoon of salt and 1 teaspoon of pepper
Mix together so that all of the kale is evenly covered

Place the kale on a baking sheet and spread evenly

Bake for 10-12min (until the edges are crispy but not burnt)

Add more salt and pepper if desired
