This week’s edition of “What We’re Obsessing Over Right Now” comes to us from one of awesome REV Rockstar Instructors, Megan Scott. Megan teaches every Tuesday night at 6pm REVBuild & Burn as well as Saturday mornings at 9am with our REVRide.  Here’s what Megan is obsessing over right now:

 

Now that it is officially fall, I am literally obsessing over everything pumpkin! If it’s either pumpkin coffee, pumpkin beer, pumpkin pie, pumpkin dip, pumpkin candles…I Love it all!!!  Here is a list of my favorite pumpkin items that I just can’t get enough of:

  • Wawa’s pumpkin spice coffee with French vanilla creamer
  • Sam Adam’s 20lbs of Pumpkin Beer
  • Jack-O Traveler Pumpkin Shandy
  • Giant brand pumpkin hummus
  • Trader Joe brand pumpkin ice cream
  • Yankee Candle’s spiced pumpkin candle
  • Philadelphia cream cheese’s pumpkin spice cream cheese
  • Coffee Mate’s pumpkin spice creamer

In addition to enjoying a bunch of store bought pumpkin items, I also like to make a delicious PUMPKIN DIP for ginger snap cookies. This is a perfect dip to bring to football parties!
Here is the recipe:
15min prep, 15min cook time
Ingredients:
1 (8oz) of cream cheese (softened)
2cups of confectioners sugar
1 (15oz) can solid pack pumpkin
1tbsp of ground cinnamon
1tbsp of pumpkin pie spice
1tsp of orange juice concentrate
Directions:
In a medium bowl add blend cream cheese and confectioners sugar until smooth. Gradually mix in the pumpkin. Stir in the cinnamon, pumpkin pie spice, and orange juice until smooth and well blended. Chill and serve!!!
